Ingredients:

2 pounds of chicken breasts or thighs

1/4 cup of lemon juice

2 cloves of garlic, minced

Cover the bowl and refrigerate for at least 30 minutes or up to 1 hour, turning the chicken pieces occasionally.

Preheat the oven to 400°F.

Spread the chicken pieces onto a baking sheet and roast for 20 to 25 minutes, until cooked through and golden brown on the outside.

Serve hot with your favorite sides or salad.

Note: This recipe works well with chicken breasts or thighs, but you can also use bone-in chicken pieces if desired. Just add a little more time to the roasting time to ensure the chicken is fully cooked.
